Our "Bouillabaisse"
The traditional Provençal dish (only on request for minimum 2 people) told you to cut and leave you with unforgettable memories. As for many of the dishes of the local bouillabaisse comes from meager meals of fishermen who were diving in the sea all the unsold fish. There was therefore no exact recipe, but recovered and embellished by the experts of the pot, today's Bouillabaisse consists, according to the chefs, the best varieties of fish (Rascasse, Rouget, Saint-Pierre , Conger, Lotte, Loup ...). It is eaten with a sauce called "rouille" and croutons of bread. Ingredients: fresh onions, garlic, fresh fennel, potatoes, tomatoes, salt, pepper, saffron, anise.
Fish:
Lotte, St Pierre, Chapon de mer, congre, murène, rouget grondin, vive, crabes, moules, seiches et divers poissons selon le marché.
